Here's film that might show the flippy wiggle thing. It seems like it would be ideal to have both ahf and screen capture film to compare. During the fight the 109 looked like it did the flippy wiggle. The film doesn't look like what I thought I saw in real time. Sorry if this doesn't help.

Looks like his rudder inputs are at 5x normal from what you would expect, and the plane oscillates back and forth wide on it's axis until the game smooths it. Probably makes for a tiny time window of near imperiousness to the game registering any hits on his air frame because of the oscillations.
