Friday night I rubbed and rubbed and rubbed my BUTT with my special RUB:)
Boy did I have fun.
Started the fire at 6am Sunday morning. When the lump and wood (oak and
apple) were ready I proceeded to
cook a fresh 6.17 lb Boston Butt.
All went very well indeed. I didn't worry about the occasional spikes in
temp. I averaged about 238' over the 11 hours that it took to reach 195'. I
even left for the 3 and 4th hour to play hockey. When I returned all was
well with my BUTT:)
It is delicious and mouth watering. A little apple cider with salt, pepper,
red pepper flakes and sugar for dipping sauce.
