Also, can I set up my controls so that on helicopters my throttle axis is reversed?

Iniitally I would just stick with all the default stuff untill your sure which type of flying you prefer as you can then work towards setting it up to best suit, VFR or Jets. There are a ton of addons most can be seen at
http://www.avsim.com and read about in the forums. Allot of information there. You could spend $100's on payware but the best imho.

PMDG 737, is the least that I've used from that list as I prefer the steam gauges of the CS727 and RFP 742
Freeware:
FSW Clouds. (freeware) FSW makes a set of clouds that greatly reduce the size of the cloud textures with very little if any loss of quality. This allows more clouds to be generated with out the huge Frame Rate hits normally associated with dense clouds. A MUST HAVE if you fly in any weather other than Microsoft's default "Fair Weather" theme
FSAutoStart
GA-Traffic- Marcus Brunner Traffic generator that allows you to greatly increase the GA traffic at smaller airports. Planes will fly touch and gos, and traffic is generally better distributed amongst all the airports
Also Microsoft have announced a update for FS9 to be released in October, so I'd hold off on Landclass and Mesh addons for now incase there are changes.
As for installing different freeware aircraft, most have autoinstallers but those that don't usually just require unzipping to your FS9/Aircraft directory winzip takes care of the rest.
