The blurry text may be because you are running it in a low resolution. Try to press the "video" button when you start up game (before you selct offline, online etc) and select a higher resolution. As high as your video-card and monitor can handle.
When you enter the actual game you will have a Frames per Second counter at top. If this is too low you may have selected a too hi resolution. Btw if you card can handle it I would strongly recommend using the 32 bit colour. Looks much better.

When you sit in the plane and open the throttle your plane will try to turn due to the torque from the engine. You have to use your rudder to compensate for this, but as your speed builds up less rudder is needed.
Look at the little ball on your cockpit. when this ball is centered your plane goes straight. When it is not centered you plane is sideslipping, and you should press the rudder in that direction (ball left of center you apply left rudder for instacne. This is the A key unless you have pedals or rudder in your stick). D is right rudder and S centers rudder.

To make takeoffs easier you should also try to activate the "combat trim" (there is a light for it in your cockpit). If it is black, try pressing Ctrl-X. This should help. If it still don't light, try just X twice.

If you still simply can't take off you can activate the 'Auto Take off' under 'Setup' and then 'Flight'. This will make your plane take off by it self if you only give throttle and don't touch the stick.

Hope it helps.
