Well the sight will work in any plane really, it just is more of an advantage in some planes versus others. You have nothing to lose if you try it though, so give it a try.
Your best bet is just to set it as your default, that's what I do. First in your Aces High sights directory, rename "default.bmp" to "olddefault.bmp". Now right click this link:
http://users.andara.com/~sconrad/images/lephturn.bmp and choose "Save target as". Save that file as "default.bmp" in your Aces High\Sights directory. The new sight should now be visible for all planes that do not have specific named sights. Just remember to adjust your head position for each plane the first time you fly it.

I have not found a better way to tune the head position in smaller increments. I have the same problem, and I normally end up setting the sight so that my bullet stream is slightly above the center point. As long as you are prepared for that, it is not a problem. It just means that at 1 G you need to aim at the bottom of the target since your bullets will fly a bit high.
There is a file that tracks your head position for each plane I believe, just a text file. I suppose it would be possible to edit that file and manually change the numbers to place your head exactly where you want it. I haven't sat down and tried to figure that out yet, but it should be possible.
