The important part of the evasive is to stay below his nose.. but don't just push straight down. I normally barrel down and away from him, timing it so I'm pulling up into a high reversal (if I have the E) starting at about D500-D300. Even a gentle pull to either side is usually enough to spoil the HO'ers aim. Do be careful of the few guys like Torque though that are really good shots. You can still avoid them, but you need to work a bit harder at it.
I use the default when I'm in clear air or I'm the highest guy around. If I'm in the heat of battle I'll use 200 or 225 to keep my speed up. Generally, climbing does you no good in the Hog anyway. You are better to stay lower and at 350 MPH if you have the choice. Speed is the key, even if a Pony or a 38 follows you down.. you can drag them away from all of their buddies before you reverse and mix it up with them. Generally, if there are high bad guys around, don't be afraid to slam the Hog on the deck and run for friendlies at 50 feet.
