You won't land many 15+ kill single sorties in a jet buzzing around at 600mph. Anyways, enough about jets.. they're too easy.
Eventually you'll learn how little stats matter, and how tedious it is flying to get good stats. If you're a good stick, the stats will follow, regardless of what or where you fly. A lot of it has to do with being able to kill the guy on your 6. Kills/hr is probably the most arbitrary stat... it depends on the time of the day you fly, where you fly (in a giant horde of friendlies, vulching (loser!), or against a giant horde), and what you fly (you're gonna kill faster in a spit or 190a8 than a 109 w/ taters, usually). 10 kills/hr should be doable in most planes at most times of the day when you're not trying for stats.
My advice is to ignore your stats and fly around low in a jugg or 109 (something along those lines - no la7's) and get a handle of reversals and overshoots. After you get a handle on that, your stats will be more reflective of your ability than your effort put into getting them.
