Star Trek: The Experience has cool rides, and Quark's bar has good drinks (get a Warp Core Breach).. but the food sucks.
Head to the top of the Stratosphere Tower and ride the rides. I did. In the pictures I look like I'm about to pee my pants, but they were fun.
Showgirls of Magic is a cool, cheap small-venue topless magic show @ the San Remo.
Jubilee is cool, but can get pricey. The sheer scale of it can be staggering. At one point in the show's history, they wheeled a 747 into the theater that just kind of appears (from the crowd perspective). I dunno if they still do that though.. but the sheer amount of boobies are almost beyond count.
All of the Cirque de Solie(sp?) shows are worth going to. All of them. Not joking. Pricey... worth every penny. Get tickets a month in advance. There's 3 different shows, at 3 different Casinos. The original vegas show @ Treasure Island, "O" @ Bellagio (it has a water stage.. very cool), and the new topless show @ New York, New York. IMHO, the very best shows in Vegas.
Take your wife shopping in the Forum @ Cesaer's, and through Via Bellagio. Bring a credit card with a high limit.
Make sure you go through the Venetian. It's awesome, and the parade in the sky (which you can take part in) is entertaining.
Don't play the slot machines at the airport.
If you're up for it, the Grand Canyon helicopter tours are a blast, and the night runs around the strip almost as impressive.

Me & my roommate, on top of the Stratosphere. From that spot, turn around, look down about 20-30 degrees. You can see the tops of helicopter rotors as they cruise in & out.
