I've noticed this too, and the only factors I can pin it down to, are control or human, as others have pointed out, and back in the days when I was on dial-up, a lousy connection. The bad connection wouldn't make the aircraft fly any differently of course, but it did change my perception of what was happening, so that I felt I was always reacting too slowly, and it is only natural to blame that on the aircraft.
Trust me, Aces High performs consistently. I have the tools to detect a 0.1% difference in aircraft performance in this game, and I've been doing this for over 17 years, I've never seen anything that can't be blamed on those things.
If you think there is a problem, check your connection, check for spy-ware or background CPU activity, re-calibrate your controls, or go and get some rest, one of those things will work.
