I have the same joystick and the problems you describie are not the joystick.

The noise you get when you turn is a stall warning, you get this when you plane is underspeed.

Planes will always turn to one side due to the motion of the prop and engine. Use your wheel brakes (C and V key) and the Rudder (A and D key for left and right, S key to centre the rudder). Correct use of these will allow you to take off in a straight line.

When taking off, don't pull up abruptly, raise your gear and flaps when you get off the ground and try to fly level for a bit to gain some airspeed before you start to maneuver.

You can calibrate the buttons of your joystick to perform these functions.

My set-up is as follows.

(i'm not at home, so i can't tell you the button numbers)

the two buttons on the base closest to you are for War Emergency Power (one of them I don't use, i just got the joystick recently)

the next row is for flaps up/down

the next is for landing gear up/down

on the head of the joystick, the cap button is for view switching and the buttons on the base of the head are for rudder left and right, the upper left button is for rudder centre and the upper right button is for Look Up view.

Trigger, obviously is set for Fire Primary and the thumb button is for fire secondary.

This set up works quiet well and means that you don't have to look up to the keyboard in flight very often, if at all.

Hope that helps

Like Xasthur already mentioned, the problems you describe are less Joystick calibration and more flight physics. Despite that, check your Joysticks calibration regularly, the Logitech sticks do have a tendency to loose calibration.

Take off:

Pull back on your stick 1/4 to lock your tailwheel (unless in a nose dragger like the P38 of course) when rolling at slow speeds. Use your RUDDER (A and D, S to center) to keep the plane on the runway. Be careful with rudder inputs, dont overcorrect. It takes a little practice, but its always good to be able to taxi ("drive") your plane around on the ground.
When you gained some speed (70-80 mph) center your stick again and let the plane GENTLY take off. Do not pull the nose high at that point. Just make sure your clear of the treetops and then get some speed built before you start climbing/maneuvering. Dont forget to retract your wheels (and flaps if you used them).

This brings me to the next question - turning/annoying noise.

Youll always need some speed to work with. Aces High has WW2 prop planes, not modern day jets. In other words, you have limited engine power. Nose low or level to gain speed. Keep up a minimum speed of 150-200 mph at first, untill you get used to the flight model a bit. Control in those slow stallspeed maneuverings will come with time. Use the autopilots X (level) and ALT X (autospeed/climb) to get to speed/altitude.

If you hear that faint buzzing sound getting louder - its you stall warning. Lighten your maneuver/turn or gain some speed. If you hear that machine gun sound/shaking its already "too late" - its the stall buffet. nose low, level off and gain speed before turning again.

Every maneuver you fly is going to cost you speed ("Energy"). The higher the Gs you pull, the higher the "price" you pay. Read more about that concept at http://www.netaces.org - a great page where you can find tons of info on gamplay, tactics and more.
