The tough thing about WWI is they had no trim so you are forced to fly with your joystick at an angle to compensate, try the targetware sim, Richthofens Skies to see if you can handle it.   DO NOT BRING COMBAT TRIM TO WWI !!!!

Did you ever try DoA?  There's also been at least a couple of boxed WW1 sims.  

It's possible, but you're right about the views being restricted by wings from what I remember about DoA.

Most Likely IŽd like to See Korea first then WW1. Like it has been said the basic model for many airplnes have been done all youŽd need to do is slight aesthetic arrangements to the model and youŽd have a new plane, as far as the MiG and Sabre they could be introduced slightly and slowly with the different warring improvements.

WWI, no doubt about it.  Hell, I'd pay $30 a month for that.  (don't shoot me, just sayin that I would)

Maybe after Flyboys hits theatres this week, more will come to the "kites with engines" fold.  Air combat in its infancy, and in its purest form.  :)

I am an old Red Baron online pilot so I am going with WWI (although the Korean War holds a lot of appeal)

Here's why Korea would be done first (assuming they go forward). Three of the more common fighters are already modeled (P-51D, F4U-4 and Yak-9U). Plus, the B-29 was big player and modeling that will cross back over to the late-war MA. New planes added would probably be the following;

F-80C Shooting Star
F-84 (3 versions) Thunderjet
F-86 (3 versions) Sabre
MiG-15 (two versions)
A-26 (two versions) Invader
AD (three versions) Skyraider
F9F (two versions) Panther
Meteor (probably two versions)
Sea Fury

F-94A Starfire
F2H-2B Banshee
F2H-3 Banshee

Widewing I think the fact that AH is already closer to Korea then a WW1 planeset is a good reason to go with something different.
