In order to tip a V1 doing 390mph at 2-3000ft you'd be limited to a small set of aircraft.
Actually it was using the wing tip vortices to upset the airflow over the V1's wing, casusing a sudden decrease of lift to one side, overpowering the crude autopilot sending the missile spinning out of control. This was achieved by manoeuvring their aircraft so their wing tip was front of that of the V1.
Actually tipping it by touching the wing tips would be a highly hazardous proposition.

If you really want to simulate a V-2, just select the map sector you want to hit and then have the game generate a 2,000-lb. explosion in some random location within that sector...

BOOM!!!

There, now wasn't that fun?
