I currently use the full saitek set up x52 (not pro). Its easy to set up (I only use the ingame mapping - so no profiles to worry about external of the game). Find the stick precise, throttle makes speed management way easier, and pedals are excellent. My one gripe with the x52 is the lightness of the spring on the joystick - I'm quite heavy handed, and it took me a while to get used to not swinging it around quite so hard - would love to be able to adjust that about it. If you have small hands, you might struggle to get it "just so" - but overall its a pretty decent hotas set up.
If I do have to change it, I'd keep the saitek pedals, and get the CH joy and throttle - purely because if I break it, I'll have to look for something a tiny bit more sturdy. I'd keep the saitek pedals as they are wider and I have big feet.
