You can choose any skin you like, but it won't "save" the skin choice until you spawn with it on the runway. Easy fix: Take off then tower immediately.
That should save your option.
Alternately, if you already have the p-51 selected, and select it again, it will default your loadout (including skin) so don't double-click the plane you want.
