are lag rolls an offensive or defensive move.

They are performed by the attacker to control closure rate and/or control the angle and prevent defender's reversal. Since they maintain attackers advantage, they may not be purely offensive, but most of the literature is counting them as such.

Do you mean a barrel roll?  If so, I use it (poorly) as a defensive manoeuvre.

Lag Roll
    A rolling maneuver, executed from an offensive position, performed opposite the direction of target turn in an attempt to reduce aspect angle and/ or control closure.

Barrel Roll Maneuver
    A vertical rolling maneuver used to reduce aspect angle while keeping sight of the bogey and maintaining nose-tail separation.
