So what you need to get a kill in sub is:
Lots of time and huge load of luck 
Just as it was in real life. But with your buds in the aircraft spotting the fleets you could move into position for an intercept.
Add several convoys and work them into the strat equation then you can have some extra targets to fill in for the time problem.
The real probs are time and no night. Surface transit speeds for the mentioned U-boats were about 18 knots. The US Gato class and later had a surfaced speed of about 21 knots. This would mean a lot of time just transiting and getting into a favorable attack position after making contact. But I'm sure the bad guys AC would be glad to keep you entertained during your trip if they spotted you. Most people won't spend half a day maneuvering into a position to attack. I might, but I'm warped anyway. :-)
At any rate, without night it would be extremely difficult to get into a favorable attack position. And with the fast night and day, even if you had night, you would run out of darkness before you could get into position to attack. Oh well, now I'm rambling. It was a nice thought while it lasted. That wake would look so nice behind a Type VIIC or a Gato. :-)
