While not Quentin Tarantino but rather a contemporary of his, I really do like the music in Robert Rodriguez's movies (except SpyKids *vomit*).  The music from Once Upon a Time in Mexico is fantastic.

I love that song, have it on my mp3, have to restrain myself from singing it out loud at work. 

I agree with Hawker25 though about seeing Mr Blonde cutting off Marvin Nash's ear every time Stuck in the Middle With You comes on.  I flash on that movie every single time, never hear that song the same way after that.
