Heya,
  Tonight I have realized that the LW are some badass planes and they can really do some damage when you get a chance. When you load the 109 with 2x 20mm on the wing tip you can ripp up a B-17 with just a couple pings! With the 190 just with regular load you can do some serious damage to anything in your sights!

Did you forget that 109 nor 190 gets to touch with the +30k buffs?  
Theres problems like:
1) Fuel
2) high altitude sucks with LWs BAAAD
3) They outrun you and fuel multiplier doesn't help getting ahead of them with 20mph faster speed
4) You'll end up into 1 head on attack and if you mess it, you're done and buff runs or you'll try dead(ly) 6 attack on buff (very deadly for that poor LW)

la5, 190, 109, n1k drops out with either poor altitude performance or low fuel (...or both...)

Ps. Bf109 seems to suck already with single 20mm, why to bother take 2 20mm more which makes it feel like buff, with all the 'fixes' in FM

Fw190 doesn't do much serious damage if everyone flies above 20k and it has low fuel to climb up there.. (or do we want spitfries to kill them cheap?)

What we have now is almost the same as what happened to Spitfires chasing pressurised Ju86's up to +42000ft, not Axis fighters vs American four engine bombers...

Real B17's could not go to 35k with a bombload like in AH, the engines and/or superchargers would break.

Currently, the LW fighters are a pain in the arse to use for intercepting B17's because:

Fw190A-8: Fuel modifier + short arena distances means by the time you get up there the B17 is long gone, and if you chase, you run low on fuel before you get there.

Bf109G-10: At altitudes over 20k, it won't fly level without constant right stick being held. Plus the fuel situation again.

The Macchi isn't much better than it's German counterparts, since with its DB605A, it's ceiling is ~37k? It sucks over 30k - I shot at a B17 at 35k and I stalled  

But, the Spitfire rightfully should be the best interceptor at high alt, except maybe if we had GM-1 for the 109
