A lot of defensive ACM is being unpredictable so your opponent doesn't have enough lead for a shot. When a higher bandit is diving in on me, I like to go below their nose which creates a more difficult shot and forces them to bleed more E to even have a chance at the shot. Break turns, barrel rolls, low yo-yo's, pitch backs and the Split-s are all maneuvers which Help to move you from the line of fire. Besides being unpredictable and knowing some basic maneuvers it REALLY helps to have decent SA. Often there will be more than one con diving on you at different intervals and each one having a different E state. Being able to roughly predict your opponents E will help decide which maneuver is appropriate.
