just some off the top of my head on my phone ....

Lookout..... mobile security (scans every download)... but most importantly allows you to locate or completely LOCK a lost phone if needed

Shazam

Astro ..... file manager

PdaNet..... tethering app

Ringroid.... easily make ringtons from MP3 right on the phone

Barcode Scanner

Sports Tap.... sports scoreboard of sorts

Google Voice .... must have this for free text messaging and will transcribe voicemails and send as texts, among other things

Weatherbug is the best weather app Ive seen on there so far

Pandora Radio..... streams music from personalized selections

Camera360........ absolute best camera program Ive found

as far as games everyone will have their favorites..... I personally like Bonsai Blast and What The Doodle

if you really want to change things up a bit then you can try some different launchers:

I recommend getting Home Switcher which allows you to easily switch your launchers...... most popular launchers seem to be ADW.Launcher and Launcher Pro...... Ive tried them both and still prefer the Sense....... but you can really customize your screens with different launchers where Sense is what it is

some other handy apps that I use regularly are:

Wifi Analyzer..... shows all available signals and their strength etc
Gmote..... allows you to use your phone as a remote for your PC (can control media player/keyboard/mouse)
GPS Test..... scans for Satelite signals etc...... also has handy little compass
GPS Status....... similar to above

as far as task killers go...... generally they are totally unnecessary on an android phone......because of the way android handles applications...... however they do come in handy for those pesky apps that never want to close on their own

there are various tips on improving battery life...... task killers dont fall into any of them..... there are things you can do though..... I personally use my phone quite a bit with different apps and browsing etc...... I still get anywhere from 24-36 hours before I even consider a charge.... I can go 2 days with moderate use.....

try turning off the mobile broadband when not in use....... you dont need this for the phone to function as a Phone......also the GPS is a big drain........ also not needed on when not in use....... haptic feedback drains alot........ theres tons of other things as well....... just have to go through and turn off the things that you dont really need running

PdaNet..... tethering app

Problem with tethering now is that the cell phone carriers are starting to crack down.  AT&T has ended their $30 unlimited and grandfathering those who already have it.  AT&T now started only offering 2GB for $25 or 200MB for $15.  Extra $20 has to be paid for tethering which Im sure can be worked around with the app you posted above as I know the windows mobile phones have tethering built into them.

Verizon says its unlimited as well but not sure on the exact number but I believe if its more than 5GB they shut off your internet access claiming that your pirating or some sort.

the thing with tethering is........ unless youre using their tethering app then theres really no way for them to casually tell if youre tethering............ sure if you all of a sudden started using 20Gb a month they might suspect something.........

but to casually tether when you go on a trip or just out and about with your laptop...... it would cost them far more than to catch you tethering (the man hours it would take to perform the steps necessary to investigate) and then they still cant really tell or prove anything, far more than they would earn off you paying for the tethering for your 2yr contract........ its just not worth it to them to bother catching someone........ in short...... they dont check

what they do however is depend on people stupidly admitting they were tethering....... then they drop the hammer........ Ive never heard of anyone getting caught tethering without them being stupid

I tether several times a month and it is still less than 10% of my total data usage

this is one of those things where they count on a couple of factors: either youll do the "right" thing and pay for the tethering........ or youll be so afraid of getting caught that you wont try it for free

when Froyo (2.2) comes out for everyone it will have built in tethering for everyone including the ability to be a mobile hotspot........ now with that they can easily tell because its proprietary software.......... with pdanet being 3rd party its virtually impossible for them to tell if youre tethering or not

I use it for stocks a lot, as well as a wireless tether.  Android apps are fantastic.
