I would simply add 2 functions I.E. Max Down, and Complete retract. Just like you have Throttle Inc,dec and Full throttle, 0 throttle.

So in real life you could skip all the other flap positions on the lever and go all the way to full?

On most planes. Just need to make sure that your speed is low enough, as most real planes will still lower the flaps and damage them if your moving too fast unlike AH.
