For convergence, I suggest 300 yards for all your fighter vs fighter stuff, 400 yards for your designated bomber hunters and ground pound'ers.  Most of your air to air kills are going to come inside 400 yards AND remember when you set your convergence you are also setting trajectory so if you set it out to 650 you are going to be rather high at the typical "shooting" ranges (200-400 yards).

For joystick settings, the best way to describe it is this: from the top, set your 0 about 2/3 to 3/4 the way down and your 90 at the very top, then stair step the rest evenly between.  Over time, tweak and adjust to your own liking.  The deadband and damping is variable depending on your joystick.  Mine is very touchy so I probably have a bit more on both than the average player.  Start with bring them both up about 2-3 widths of the slider itself UP from the bottom.  Again, tweak and adjust as you see fit.
