Had lunch with JimmyC and a few mates yesterday, had no idea what was on the menu except that it would involve the best locally sourced meat available, and quite alot of it ... and this is what arrived on the table. Brined for 3 days, cooked for 12 hours, awesome :aok

local pub has a great chef, we gave him plenty of notice and asked him to show off ;)

finished off with a treacle tart (which I forgot to photograph), also excellent.
