Since nobody has mentioned it, the most appropriate  song during flight could be Aces High by Iron Maiden:

Jump in the cockpit and start up the engines
Remove all the wheel blocks

I love Orion by Metallica.  Probably the most underrated instrumental I've heard.  Have you seen "Through The Never"?  There's a truly awesome version of Orion at the very end.   :rock

Yeah.  I'm not sure you could call it a documentary though.  Kind of a live concert with a pretty weird story set to the live music.
