So when I get my gaming rig set up I should get ride of the USB headset I have now and switch to one that has the plugs so I actually use my soundcard?

If that is your preference.  Personally, I like having the ability to have vox come through my headset and game sounds through my desktop speakers that having a USB headset allows you to do.

I like being able to change my voice with my usb headset!
