Why can't I alt-tab without seeing my plane is there a way to allow the game to render when not being focused on?

Are you talking about having an adjustable window size when you alt-tab, rather than disappearing and going to the task bar?

Yes! I've got two monitors and was wondering if there was a way I could work on one monitor while still having AH open on the other?

There is no way to do that in Aces High.
