I did manage to find and switch to the default views. With the default forward view, I can see all the gauges, but just barely after using page down and back arrow (80 FOV).
The problem there is that to get a straight ahead view, I have to be holding my hat switch fwd all the time. That's a worse problem than the one I have now.
Is there any way to get just a view of the whole gauge panel that I can paste into my fwd hat switch setting? Something about this plane and a few others - the page down arrow and back arrow seem to have a very limited range compared to the rest of the plane set. 
There isn't a "gauge only" view but you can set the "forward" view to look at your gauges. You won't be able to tilt the view so it works better with a wide FOV.
I didn't mean you should set your POV to 80, I just mentioned that as information. You can see more gauges in your front view with a wider FOV.
You can toggle a centered view with zoom if you're using the default tilted front view. You don't have to be zoomed in for it to work.
