YEP! Thats how Granny used to do it! The "Sour" in Croats was from fermentation and having Vinegar Flies with access to Fermentation container. Croat is un air locked, thus allowing   vinegar production. I have some films on this in time lapse...now to just find them. Hopefully I still have them???! Also have films of making The Absolute Best Apple Butter! How good? Even when Granny used Winter Green instead of Cinnamon, it was still Damn good lol I do love my Winter Green Snuff though...so maybe I was biased
