The best settings are the ones you're comfortable with.
IMO the most important settings are good view directions on your HAT switch. You should be able to look in any direction you need to quickly, and without hesitation or delay. It needs to become as natural as turning your head, mostly through practice.
Rest assured that you're not being out-flown because of your joystick settings, you're being out-flown because some of these dorks are really whoopee good. It comes from spending thousands of hours playing.
