Here is a tasty and economical recipe for those on the Atkins Diet. This tempting treat is especially good for those in the "induction" phase of the diet, as there are absolutely zero carbs.
Go to your local PET SUPERMARKET and select four of the hardened pig's ears that are normally meant as a chew toy for dogs - you can usually find them in a barrel near the checkout counter. Look for ears that still have a fine sheen of oil on them. They should smell of clean pork with no off odors.
Arrange the ears on a cookie sheet large enough to accomodate the ears without them hanging off the edge of the sheet.
Pre-heat your oven at 350. While the oven is heating up, do the following:
1. Using your largest spatula, scoop up a generous portion of Crisco brand lard and "butter" the ears with at least 1/4 inch of the lard. (This is not the time to be skimpy - live a little

)
2. With the ears thickly frosted with the lard, slide the cookie sheet into the hot oven. Let bake for 12 minutes at 350, then let stand and cool for a few minutes.
3. You will find that the ears are now soft and wonderfully chewy. Enjoy all the porky goodness using the ears to sop up the lard and juices from the pan.
The best thing about this recipe is that when you have finished sucking and chewing all the goodness out of the ears, you still have the ears!
Simply wash them out in warm water and spread them out on the kitchen counter top to dry overnight. In the morning, you will find the ears to be hard once again, and ready to be used again in your favorite recipe.
