So what if Saddam Hussein filed legal proceedings against the US for wrongful invasion with the UN? Would we have a defense?

He wouldn't have a case. He never complied with the original cease-fire agreements from the first gulf war, which began after he "wrongfully" invaded Kuwait

When Iraq used gas in the Iraq - Iran war, Iran took it to UN and US used it's veto right to get Saddam out of the trouble.

Draw your own conclusions.

Ok so who exactly (appart from Britain) would use it's veto to get the USA out of trouble......and considering public opinion of the UN in America right now......would the USA even care what some Frenchman in a suit in Brussels says anyway?

The cease fire was not complied with, anything goes after that.
