Here is the film of the knife edge flying you asked for. It is 1M zipped, one continuous film containing the following:

Typhoon,F4U-1C,P51,P47-30,P38,FW190-A8,B26(for fun),109G6/R6,Zero,N1k2,LA5. Didn't try the 202,205 or Spit cause I'm sure they will too.

Test conditions-full fuel, take off NE A24 Online. Once airspeed 150 or higher roll onto side (left cause it was comfortable) and maintain altitude and heading (aprox). Then initiate climb in this flight attitude. Climb to at least 6k, test over, return to land.

As you can see, all a/c 'cept for the B26 were able to easily maintain and then intitiate a climb while flying with wings 90 degrees to ground.

Are these A/C truly capable of this manuever? And at such a low airspeed to maintain altitude and then intitiate a climb?

If you would have rolled right you could have done a knife edge loop in most of those planes.
