why is the propeller lever red with the letter 'M' on it?

That's the mixture control.

but when you look at the quadrant it is: (from L-R)
supercharger control
throttle
propeller
mixture.

and when you change prop pitch, the lil red knob moves.

That's a mislabel bug. The moving knob should be P for propeller. The far right knob is the mixture control and should show the M.

More likely it will be fixed in the new graphics version. Good catch.  :aok
