I just started playing this when I'm not in the mood to "Kill or be killed" and rediscovered the simple joy of flight.
Here's where I need some help.
What add-ons do you consider essential?
I'm looking to add aircraft and scenery but some sites have SO MANY add-ons I was wondering who could recommend what.
Please give links whereever possible.

I like the early birds especially and when I get home tonight I will give you some worthwhile links.
Now, as to the "simple joy of flight" aspect of it, I don't think the MD11 fills the bill for me, I prefer the DC-3 and some of the early biplanes.

also there are some spitfires out there that are pretty good too!
For the F16 RTFM I recall having to download some additional stuff. Also get the VIPER kit with it... I love screaming feet from the ground in the F-16 It's scweet!

A couple speed tweaks - First of all delete the XML file in the Autogen directory. Secondly download the replacement textures from flightsim.com (ffpv2.zip and resautog.zip) These shrink the size of the cloud textures 4 times and my frame rates with these tweaks from from 12-15 upto 36 where they should be. It took a lot of trolling around on the boards to find these fix's so make sure you use them.
If you want ATC - I suggest http://www.eskyworld.com I run new york approach generally on the weekends.

Muck, here is one of my favorite sites for payware aircraft. They are cheap for what you get in my opinion and there are some freebies too.

http://www.fsd-international.com <--- They made a T-38 (USAF trainer) definitely worth snatching that's freeware. flightsim.com is the current host for it, the patch, and the paint kit. You have to sign up in order to get on the server, but it's free and they don't send any SPAM to you. FSD also has some excellent payware.
For the rotorheads... http://www.hovercontrol.com has several helos to snatch. Get the 2k4 Huey, AS365 by Antti "The Finn", and maybe the S64E if you like 12 ton egg beaters. There's a lot of helos listed here along with repaints, so take your time going through 'em.
http://www.simvation.com has a MONGO library to sift through, but it's real hard to tell as to which AC sucks and which one is nearly perfect.
http://www.avsim.com is like simvation. Snag the Stearman, Pitts Special, and the POSKY C-17 Globemaster III along with the C-17 sound pack.
POSKY, or project open sky, has a lot of aircraft to download, but watch out. I've seen posts on the simvation boards from guys who max out their FR under any condition say that "after downloading the POSKY A300 my FR crawled along at 5". In most cases, you need a real powerhouse rig just to view one in the preview window, let alone fly it. They are heavy on the polys and special effects. http://www.projectopensky.com
Mike Stone (http://www.pmstone.com) has made some pretty good AC, but he's also got several that out-and-out suck. His F-86 is one notable example of one that smells foul. I'd recommend his 727 with add-on cockpit (all his AC need 'em) and add-on sounds, L-1011, MD-11, and most definitely the BAe-146/RJ-85. There's an add-on 'pit at simvation for the RJ-85 that'll work with any three or four engined AC. It's very extensive, very real, and doesn't look like crap. I forget where I got my add-on 727 sounds, but they're the closest thing to REAL. Look around for a sound pack by Daniel R Careri for either the 727 or 737. It should be under FS2k2 add-on sounds on simvation or avsim.
