Anyone know of any brands that don't have brown sugar in them? Or atleast not in abundance?? I'm trying to find a good beef jerky for this weekend, nice a chewey, no flavorings, unless it's natural.
Going to a living history and need a good quality beef jerky..
It's this weekend...

Mmmmm... jerky. There's a jerky store where I grew up... nothing but jerky of every kind imaginable. Beef, deer, ostrich, turkey, everything. Expensive, but yuuuuummmmmyy.
Try searching for it online, maybe you've got a similar store in your area. If not, some delis and meat markets make jerky.

What kind of meat should I use when making my own? And what cut?
-
I always used flank steak, but like the link says "any firm meat will work".
-
I used bottem rounds(always the cheapest $ wise), top rounds, eye of round, (all roasts) and i use a dehydrator but smokers are better!:aok
Buddy of mine just got back from canada and has 150 lbs of Caribou meat for me !!!! yummmmm

I use London Broil. Ask the butcher to slice it too.

Yeah, mom was kinda like, were gonna have to slice it you know..
Anyone got a good recipe for a semi spicy maranade?

My dad brought back a load of venison jerky from the whitetail he shot in Texas this October. Yummm....

Almost any of the dark, quick (30 minute) commercial marinades works well, especially with venison. I use a brand called Dale's , but I don't have any idea how available it would be outside of Arkansas. No other seasonings are needed when you use this.

Man...that threw a cravin' on me. Now I gotta go kill something.

A good lean chuck roast works fine.
Cut out the bigger fat chunks. You'll have a little waste but the price is right.
Personally I like Teriyaki, garlic powder, seasoning salt, dash of pepper, Onion powder.

Step 1: Drive to Tillamook
Step 2: Buy beef jerky
Step 3: Eat beef jerky
Repeat as necessary. Don't live near Tillamook? Well, that sucks for you. :)

I use Dale's sauce too. Its readily available here in FLA. I usually put some rickey's or luisianna hot sauce in the batch along with some garlic powder and black pepper.
I've always done mine in a dehydrater, but I need to try the smoker next time.
