A Pancake = 0.957
Kansas = 0.997

Kansas is flatter than a pancake.

Depends upon the scale.  From an astronomical standpoint, the Earth is far flatter than our technology to, say, grind a mirror.

This was a college research paper using satellite terrain mapping and micro topography mapping systems.  Do a search on yahoo and you'll see it.  I was just amazed someone went to all that effort to prove something everyone already knew.  Oh well... college professors and grants... whatever gets a buck.
