Planes in AH Russians could use in such scenario: P-40s, Hurricane MkIIc, A-20. None of the original russian planes are suitable for an event like that due to their manufacturing years (La-5FN spring '43, La-7 mid '44, Yak-9T early '43, -9U spring '44)
Germany: Bf109F-4, Ju-88, Bf110C-4/b (not sure about Macchi C.202)

If it's for Fb then the Fb Stalingrad map don't contain enough land area for you to explore the complete air war. There are several Stalingrad campaigns made by FB players that can be downloaded. Theres's several "mission/campaign" generators that include Stalingrad. These are more made up using the existing map restrictions.
With such a small area to work with you would be limited to events prior to the encirclement thus missing out on the most active part, the Stalingrad Airlift.
Map of the airlift:

Read this site:

If you are planning to develop campaigns or mission just look for the
Plane Distribution Table Eastern Front v0.92 as developed by the Ian boys.
I have in xls format. I can email it to you. My email addy is in my sig.
