I know we have a bunch of barbecue connoisseurs here, so I was wondering if anybody had pork spareribs recipes (rubs or barbecue sauce plus cooking instructions) that they'd care to share. I've got eight pounds of spareribs just begging for some proper care.

Leave the ribs in the fridge marinating overnight in the following marinade sauce:
1 can of Dr. Pepper
1 can of beer
3 oz bourbon
Generous sprinkling of KC Rib Doctor Rub
1 lemon squeezed
2 tablespoons of brown sugar
Place woodchips in water.
Next day:
If you have a smoker rub lots of KC Rib Doctor Rub all over the ribs. Place in smoker at 225 degrees...for about 3-4 hours. 15 minutes before removing the ribs mop them with KC Masterpiece BBQ sauce (you can get it at virtually any supermarket). Do not put the sauce on while smoking.
If you have a BBQ with two grills place the wood chips (hickory is nice) in a shallow aluminum pan on one side of the grill and fire that side up. (Make sure you have soaked them overnight in water though, otherwise they burn too quick) On the other side of the grill place some water and beer in another deeper aluminum pan.) Then, once the temp reaches 225, put the ribs on the upper rack of the grill above the water and beer...do not light that side of the BBQ.
Cooking time should be about the same 3-4 hours.

Thanks for the recipe, Curval! I might give that one a shot. I'm not a huge fan of KC Masterpiece though, so I might just mix up some of my own barbecue sauce to slather on at the very end.

Curval im going to the store ASAP to get ribs after reading that. We dont get the KC stuff here but i think i can emulate it closely enough.

Does anyone know what's in KC Rib Doctor Rub? I've never heard of that product before, and I'm not even sure if it's available around here. I probably have the ingredients on hand to mix up something close to it if I can't find it at the store.

Someone at work mentioned somthing I cant answer, regarding the cooking of baby back (pork) ribs
Do you boil them before cooking on a rotiserrie or grill?
Should you? How long? Etc

If you were to ask a Texan or someone from KC they would call you a heathen at the mere suggestion of boiling ribs.
That said...if you don't have time for 4 hours of cooking you can boil the ribs for an hour or so and that will make the meat soft as butter. You do lose flavour though.

Yea...you cant control the temp on a rotiserrie tho for lower heat & longer cooking....but they do a lot of things nicely.

What is "Dr. Pepper" ? a kind of soda ?
It can be strange for you but for me it's as exotic as chinese beer ... in fact it's more exotic as I've already tasted a chinese beer :)

Yea Straffo....kind of a mix between Coke and Cream Soda.
Now...as to a great Rub:
4 tablespoons of superfine sugar (like icing sugar)
2 tablespoons of paprika
1.5 tablespoons seasoning salt
1.5 tablespoons celery salt
1 tablespoon black pepper
1 tablespoon Cayenne pepper
1 tablespoon onion powder
1.5 teaspoon chili powder
1 teaspoon cumin powder
(note that the last two are TEAspoons not TABLEspoons)
The above makes just under a cup of rub. Multiply the ingrediants out in relative proportions
Mix 'em all up and you have a fantastic rub.

There you have it!

Well if you can get IBC rootbear, that stuff rocks.
Still, I would rather be passed out in a room with FDBs, then drink Dr Pepper!:D

I love Dr. Pepper to the extent that I've paid to have some shipped to me from Texas before! To try and give my teeth and fat bellybutton a break though, I mostly drink Diet Pepsi, and like that too...just not as much as the doctor! Hmmm, maybe I just like anything with the initials D.P. <--- go ahead perverts, I set the ball, now spike it! :D
Of course, mom didn't allow much of anything that was loaded with sugar while I was growing up, and about the only carbonated beverage we had was Tab. And really, after drinking that crap, anything is tolerable.

BTW, I was looking at a smoker the other day, but I have never used one, any tips on smokers and how to use them?

The spareribs turned out great BTW. :) I used Curval's marinade and rub recipes, and I made a homemade brown sugar and molasses-based barbecue sauce that beat the crap out of KC Masterpiece. Good eating!

Sixpence, if you're just starting out get a Brinkmann Water Smoker, known as the ECB for El Cheapo Brinkmann.
Currently on sale at the local ACE Hardware stores for ~$28.
Then go here: http://www.bbq-porch.org/faq/07-2-1.asp and make the necessary improvements. Some of the newer Brinkmanns already have some of them improvments. Brinkmann is listening apparently.
Notes: For those of you who can't get Dr. Pepper or perfer something a little more "natural" use Curv's marinade and substitute Apple Juice or Apple Cider for the Dr. Pepper. I leave out the bourbon too. I REALLY like that one.
As for rubs and sauces, they're available online. Or let me know and I'll build you a package and ship it. PayPal for ease of transactions and you can have it for actual cost. I can pick this stuff up at the local grocery 1/2 mile from the house.
I live in the little city that holds the Kansas State BBQ contest every summer.

I'll keep that in mind, it's hard to find good BBQ up here. There is a place where my brother lives in Methuen(Texas steakhouse I think it is called), and they have good ribs, but nothing like the BBQ I had down in Jax. Once you get a taste of good BBQ it's hard to live without, and you just can't seem to get meat tender to the point it melts in your mouth unless you smoke it(it seems that way anyway). All the BBQ places down south smoked their own meat, up here it's hard to find.

Here's a recipe I use for pork chops and ribs...
4c water
1c packed brown sugar
1 small onion thinly sliced
6 large garlic cloves, crushed
6 large fresh thyme sprigs
1 Tbs coarse salt
2 tsp crushed red pepper
8 1' thick pork shops or 4 lbs pork ribs, I cut the ribs into individual pieces before marinating to increase the surface area, it's not necessary though.
Combine first seven ingredients in saucepan. Bring to a boil then cool completely. Marinate the meat with this in the fridge for 24-48 hours.
The mild spicy sweetness of this marinade is great but you may want to increase/decrease the red pepper for your taste, I use 3 tsp for mine.

Pull the clear skin off the inside first. then rub with salt, sugar and vinager.

To keep it easy... I usually go out and grab 3-5 different brands of the hottest spiciest BBQ sauce I can find. Mix them all together and add some fine-ground cayenne pepper.. or any hot pepper, hotter=better. Light the fire and start brushing. Don't usually marinate... but like to lett'em sit overnight with a nice dusting of flaked Garlic and a little salt (salt not really required).
