Anybody have any suggestions for reading material that has excerpts from real WWII pilots?

Hmm.
"Aces Talk"/"Those were the German fighter Aces 1939-1945"  by Constable/Toliver

"Duel in the sky" by Edward Simms
(think it's the English title, in german it's "Zweikampf am Himmel"

However, the whole biographies are usually much cooler.
Try "Dancing in the skies" by Tony Jonsson, or "Shot down in Flames" by Geoffrey Page, for a really good and human sided read.

Good luck!

While not biographical; "Piece of cake" is wel worth reading.
