Ok, my hit percentage in fighter went from 10 to 12% in AH1 to 5 or 6% in AHII. I KNOW I am shooting the same.
Is the hit bubble smaller?
Are the bullets more rubbery? :)

It has been said MANY times by HiTech and other HTC staff.
Aces High has NEVER had a hit/target "bubble" notion. If you hit the airframe/aircraft, you hit it ... simple as that.
Gunnery is not more difficult in AH II as compared to AH I ... its just different. Visual clues are not the same and the 800-1K shots are a thing of the past.

I don't see much difference in visual cues, and I can at times hit shots of 800 or more. I notice that I'm not hitting nearly as well at 400 or less, unless the plane is not maneuvering much.
I always hated the hit bubble in AW. I was glad it isn't in AH.
I have often wondered if the back half of the P-38 is represented as a very large area that includes the empty space between the tail booms as part of the plane. It would explain the entire tail being shot off, which in real life was next to impossible. Or it could just be the damage model. If you look at a P-38, it has a very small profile from most angles, actually smaller than many single engine fighters. I do know that no veteran P-38 pilot I know remembers seeing an entire tail come off of a P-38 except from a collision.

Anyway, I prefer flying to 10 yards and firing now anyway :)

Ranging indicator is much different now. Not counting down single yards. If you use to wait for a certain range to shoot and wait for the snapshot, it just ain't the same.
No more hit sprites under the nose. This was a tremendous advantage in AH I that no longer exists.

I have had a few hits at 800 in my P-38, but thats is the only plane that I have found that I can do it in and it really doesn't do much damage. 1K ... forget it ... not even in the P-38, from my experience.

I can hit at 1K, but as you say, no damage. Probably because the 20MM ain't hittin. I do it more to get runners to turn than to get kills.
Boy I sure miss those hit sprites under the nose :D , I got some killer deflection shots like that. I could pull real hard and blow one up without actually seeing it, let off on the stick, and see the guy fall in pieces. Now it is harder to track them.

No doubt the hit sprites under the nose being gone hurts. I got many a fine kill watching those lights through the dashboard....
What does seem different is the execution. I pull the same deflection which used to light them up (albeit through the dash) and nothing happens.
Perhaps the range thing is significant. I tend to shoot at 200 or less.....now, 200 might mean 299......

Here's a bit of information on judging distance.
The default gunsight will tell you when you are pretty close to 300 yds from the target aircraft. Once the target aircraft spans the width of the outer circle of the sight, he is pretty close to 300yds.
Keep in mind that it is not "precise," as a larger aircraft ( buffs, goons etc) will of course fill the sight before you are that close.
However, if you go off line and mess around with your gunsight, it can show you alot of information. You just have to be aware that it's there.
As far as the hit sprites showing through the cockpit, I kinda miss it too. But.....I like the fact that it is more realistic without them, and presents more of a challenge. It was a crutch...gonna try walking a bit without it ;)
