Axis aircraft by David Mahoney published by Chancellor Press isn't bad - very nice plates and pics.

There are the Osprey Aces books. A Google search for Osprey books will give a wide selection.

Rene J. Francillon has a very good book on Japanese a/c > Japanese aircraft of the Pacific war.

Francillon's book, as mentioned above, is THE classic. It's a bit old now, and contains a few errors on armament, but there's still nothing else like it.
