Two whiting fillets, thawed and cut in half
1 cup whole grain cornmeal
1 tablespoon sea salt
1/4 to 1/2 cup olive oil
Mix the sea salt with the cornmeal. Wet the fillets with cold water and roll them in the cornmeal. Heat the olive oil in a large skillet. Put all the fillets in the hot oil. Cook until golden.
The recipe is actually very healthy. Whole grain cornmeal has lots of fiber. Sea salt contains lots of trace elements that normal salt does not contain. Olive oil is the safest oil for frying due its content of mono-unsaturated fat. Using other types of oil could lead to an increase in chance of stomach cancer.

The part I object to is the whiting filets. Use some decent fish.

My favorite fish recipe:
2 tb Flour
1/2 ts Lemon pepper seasoning
1/2 ts Dried parsley flakes
1/8 ts Garlic powder
1/2 lb Halibut steak; 3/4" thick
2 ts Olive oil
2 tb Lemon juice
1/8 ts White pepper
1/8 ts Hot pepper sauce
Throw all that **** out and go to In-N-Out.

The easiest way to make fish for guests is this.
Heat up a cast iron frying pan so it is hot enough to boil water drops instantly. But not so hot as to burn off the oil coatings they all have.
Take your fillets and dip them in flour each side so you get a nice coating. Season with some salt and pepper.
Drop 3 tablespoons of butter into the pan (or a bit more if necessary to get a good layer of melted butter in the pan)
Stir the butter around until it just starts to turn colour. Do not let it get too brown just a hit of colour is ok.
Lay the fillets in the pan and let cook for 3 or 4 minutes depending on thickness. Poke them with a finger to see how they are cooking.
When they seem to be firming up flip them over. The second side will cook much faster than the first side. You may only need to do them 1 minute.
Now take your fillets which are nicely browned out of the pan and plate.
Now the good part.
Take about 2 tablespoons of capers (you can buy them in any supermarket, they taste salty and are green pea sized vegtables - they come in a small jar preserved in brine) and throw them in the pan.
Take a lemon and cut it in half and squeeze it into the pan as well.
Stir them up to make a very nice lemon butter sauce and spoon over your fillets.

I like simplicity. I especially like recipes that require four ingredients or less.

Pistachio Crusted Grouper
1 Grouper Fillet or several
Flour
Egg Wash
Roll in chopped Pistachio's till covered
Pan Sear till Pistachio's start to brown
Bake until done "usually about 20 min. at 375^
Serve topped with Mango salsa
1 cup diced fresh mango
1/3 cup roasted red peppers, drained & diced
1/3 cup diced red onion
1 jalapeno pepper, seeded, minced
2 tablespoons fresh mint, chopped
1 tablespoon fresh lime juice
I have actually cooked this for guests who even after 2 years call wanting to know the next time I am going to cook it for them...

The larger the fish, the higher the contamination of mercury, pcbs, and fats. Whiting, pollock, and cod are all relatively small fish, and also feed on crustaceans.
