Well, are there?
-
No, not any sims.
I understand an arcade type game is being heavily modded and could possibly be made into a sim. It's called Wings of War.
Here's a forum for it at SimHQ, browse it and see if you think it's worth it (http://www.simhq.com/simhq3/sims/boards/bbs/ultimatebb.php?ubb=forum;f=116)

It's a work in progress as they say, but Targetware (http://www.targetware.net/) has a WW1 module called Richtofen's Skies (http://www.richthofens-skies.com/index.html) for their core Sim engine.
I haven't played it, but it looks visually interesting...

If the Target Rabaul mod is anything to go by, Richtofen's Skies should be great.
The only problem with TargetWare though is there is never anyone online

All i want... is a game of Red Baron (original) or Flying Corps' calibre... with modern graphics. :(

DOA III is great, if there were ever anyone in there.

Red Baron was fun, I remember playing that game a lot.
