How do you set your Rudder increments in AH ?? (You know, the slide bars going left to righ in the setup...)

All 100, just like roll.  The only controls that need to be reduced, IMO are the pitch sliders.

Mine is scaled up. My rudder seemed really sensitive so I set it so it takes half deflection or so to get full input.  Made life a lot easier for me!
