Woot...Back open for business.
Now............I need suggestions for a pork butt rub and cooking times.

I grew up eating at Bessinger's in S.C., and I still use their sauces. It's a honey mustard bbq sauce that's great on pork. I normally use their recipe for pork unless I'm cooking for a theme'd party.
1 qt. apple juice
1 qt. apple cider
1 C. salt
1/2 C. garlic powder
1/2 C. onion powder
1 C. Worcestershire sauce
1 C. light oil
1 T. ground thyme
1 tsp. black pepper
1/2 tsp. cayenne pepper (optional)
1 C. prepared mustard
Baste 4 - 6 hours before cooking, and every 30 minutes while cooking.

I have BBQed everything in the book I guess and have been doing so for a lot of years. From small, family Qs to large partys, etc. I have done every kind of meat imaginable....at least I thought so until recently reading something about the pork butt. Never tryed it. So I`m going to give it a whirl.
Don`t know how I overlooked this.
After I think about it , I guess I have done a pork butt in a roundabout way, but it was still attached to the whole hog. lol

Oh, almost forgot, coca-cola works real good as a marinade, since the pork is already inherently sweeter than pretty much any other meat you're gonna cook. It makes it really tender (and takes stains off your driveway), and gives it a good, sweet taste. Saw it done on Iron Chef, tried it myself, and got really good results. Bananas on the side went perfect with it.

I second the coke marinade. My ribs came out GREAT using it. I've decided to KISS (keep it simple stupid) when it comes to marinades for now on and coke worked well. I want to try Dr. Pepper some time to see if there's a difference though.

I did mine overnight in plastic ziplock bags. It certainly smells ALOT better than better than beer or any other mixes I tried.
