Title: Beer and zakuska
Post by: Russian on August 12, 2005, 11:06:02 PM
I can’t think of English word for this, so I have to use Russian. Zakuska – is usually a small snack that is eaten with alcohol. So I wonder what kind of snacks people eat with beer.

English would be simply "bar snacks"; and would generally be pre packed foods bought over the bar such as peanuts and potatoe chips.

However; the Spanish have a tradition of something called "tapas" (google it); which are very small dishes usually supplied free with every; or at least every other alcoholic drink.

Like most non-Spaniards; I think Spanish cooking; on the whole; fairly ropey; but Tapas are glorious; and I generally try to survive purely on Tapas in spain rather than go to a "proper" restaurant.

(Side note: English cooking has historicaly been so awfull that we've had to change our cuisine; and these days; eating out in England is as good as anywhere in the world. Other nations; which haven't had such an awfull reputation haven't seen "the need" to upgrade their kitchens (such as Spain); and consequently you get horrid stuff such as rabbit head stew or chickens feet soup which we english stopped eating a 100 yars ago).

And if I'm at Los Vaqueros (local mexican joint in the back of gas station, you gotta try it to understand), Camarones Rellenos.  Fresh giant shrimp, stuffed with smoked gouda, wrapped in bacon, deep fried, served with chipotle mayo, fresh guacamole, and shredded cabbage.

People have mentioned most of the obvious ones, but one of my lesser known favorites is the deep fried pickle (dill).  Yummy.

Fresh boiled peanuts are great with beer.  Served up hot from the crock pot, or cold after refrigeration, both methods are good.

You know you're in the South if you ever see boiled peanuts at the bar.  They're very popular in these parts.

Vobla - dry salted river fish. Or shrimps.

Damn, my Cousin lived at my flat for 3 weeks, and he managed to pour water into a plastic box with vobla in my fridge... Took me 3 days to figure out who died in a fridge, I was seriously looking for a mouse that hanged itself ;) (Russian expession: "a mouse hanged in a refrigirator" [v holodil'nike mysh povesilas'], means total absence of food).

I don't know any other nation except Russians/Ukrainians/Belorussians who drink beer with vobla. It's a great pleasure to take a fish, knock it against a table and tear it apart :) A real beer party ;)

I was waiting for someone to say dry/smoked fish. That is the best zakuska. Also dry terriaky style meat is great. I like to eat boiled eggs and dilled pickles / tomatoes with dry fish. Soo good.

In Romanian, zakuska is a red-pepper-eggplant spread eaten on bread.

The best beer food is, and always will be, Buffalo style chicken wings.

Russian, even don't think about that!

Start with mild.

Zakuska: chicken wings, dry or smoked fish, raw salmon, river crawfish,   shrimps, cheese, red caviar (prefer black but you know... I am not BG yet).

Tuna/mayo? Here we use ground herring mixed with brynza (salty low-fat cheeze) and dill. Good with black bread but much better with pancakes.

Hmm. Never thought about it as "zakuska", but on "Shrovetide" week it definetly is. But for vodka. But I prefer pancakes with caviar or salmon (syomga).

Ok, I very rarely offer up a recipe, but here is one that anyone can do.

Take a bag of pretzels (regular size, not the large ones), put in a few teaspoons of vegetable oil, pour in a couple of teaspoons of cayenne pepper, toss a pouch of the ranch dressing mix in there, and shake it all up.

Empty into a bowl, let it sit for about 10 minutes, then serve.

Different types of beer go better with different types of food. Wheaties with bread and cheese and deli sandwiches, ales with meat and potatoes etc.
