Seeing how the 7th is my BD, I have 4 racks laying nicely in a bed of Stubbs soakin up the goodies. I also have a 1 1/2 ft tenderloin doing the same. First thing in the morning it`s fire up the smoker, then make the mandatory beer run. :)
Gonna be some happy campers here on the lake I betcha.

The historical society came up with this as a "near as possible" date.
The parchment that the original birth certificate was on is old and cracked. Also the berry ink has faded to a near unreadable state. :)
Man.......a mixture of mesquite and hickory sure smells good.

C'mon if not for the pleasure of seeing y'all drewl I allways post pics of my ribs.
PS
Cause I was in a time crunch this weekend I bought "pre-cooked" ribs (Loyd's brand) this weekend. Pre seasoned, cooked, smoked, and sauced. All I did was wrap them in foil and heat them up in the oven (all 5 racks of them) and they were a VERY pleasent surpise. They were excelent if a little more expensive.
For those of you that are smokerless or cooking disabled alltogether they were easy and VERY tasty.
Next time I'm going to do the same and pre-cook them and vacume pack/freeze them for the actual event.

Well, the ribs turned out great. As a matter of fact I would say they were the best yet. After tehy were marindated in Stubbs overnight I just put them oon the rack and let the mesquite and hickory do it`s stuff. I left them that way until they had a nice color to them, then wrapped them in foil with a good amount of Cattleman`s and beer for the finishing touches. Very, very tender.
The loin was very tastey but a little "stringY". Still very good over all.
Guns I keep forgetting I have a digital camera now or I would have posted some pics.
