I lowered the flaps & they got blown back up when I oversped them. I lowered again & got the flap noise & plane handled like the flaps were down, but the graphics did not show the flaps lowered.

When you exceed the speed that flaps can be safely deployed, they retract. It simulates the pilot pulling the flaps up to prevent damage.
When 190 flaps are down you cannot see them. They are split flaps, and drop from the underside of the wings. Try looking at the plane when it's on the ground, and then drop your flaps. You'll see where they are, and why you don't see it from the cockpit.

It is why the Spit has those little patches on the wings that raise up as the flaps lower, so that the pilot has a visual indicator that the flaps are down.
