If you're a Mexican, Texas is just land that was taken unfairly and was known as part of the Mexican state of Coahuila thus Coahuila y Tejas.
If your a Texan, yes, it's the Mexican state south of Del Rio.

If I were like you beetle I would be compelled to point out that cheese is a common TOPPING for many varieties of Enchiladas and more than likely thay are based on some form of dead animal, (take your pick). But I'm not like you so I won't. However kudos to you for being able to correctly Identify refried beans and rice! Thanks for your observations Captain Obvious, .

OK, first off...
Cheese enhiladas are VERY popular down here. I prefer some kind of dead animal stuffing but cheese is good too.
Second, I don't much care for Willie's politics either but he's a heckuva singer/songwriter. And "Trigger" ain't going anywhere anytime soon.
Third, the Spoetzel brewery doesn't make a bad beer. Visit the brewery and you'll see why. You also get free beer which is like, cool 'n' stuff.
Fourth, you should have asked "What is it and what is it made from?" would have elicited a proper answer from well over a million people as that's how many ways enchiladas are made. My fave? Stacked enchiladas with a fried egg on top...OMFG!1!11!!!!1!! TEH B3ST!1!!!!
And here ends my Texas Culture 101 class...
