AOA is Angle of Attack - the angle between the direction the aircraft is flying and the chord of the wing. Limiting the angle of attack of the wing for a given speed prevents the wing from stalling, but also limits the turning performance of the aircraft.

Enabling the stall limiter in Aces High does just that. It's helpful for the new pilot getting the feel of 'flying', but will put you at a disadvantage in a dogfight against most players who have disabled it.

Here is a brief description of AOA (http://en.wikipedia.org/wiki/Angle_of_attack)

Hope the sketch makes it clearer.

The stall limiter does not actually prevent stalls, it does however make them less severe and more unlikely

Here is a write-up on flight dynamics (http://trainers.hitechcreations.com/flightdynamics/flightdynamics.htm) from the Trainer's Website (http://trainers.hitechcreations.com) which discusses angle of attack and the critical angle.
